I tryed this one and its great.Hope you like it to.<BR/><BR/>Weight Watcher Recipe <BR/>southern style oven fried chicken recipe | weight <BR/><BR/>Southern Style Oven Fried Chicken<BR/>1/2 teaspoon all-purpose flour <BR/>1/4 teaspoon salt <BR/>1/8 teaspoon cayenne pepper <BR/>3 ounces buttermilk <BR/>3/4 cups cornflake crumbs <BR/>1 pound boneless, skinless chicken breasts,<BR/> cut into four 4-ounce pieces<BR/><BR/>Preheat oven to 365 degrees F. Lightly coat an 8-inch baking dish with nonstick cooking spray; set aside.<BR/><BR/>Combine flour, salt and cayenne pepper together in a medium-size bowl.<BR/><BR/>Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.<BR/><BR/>Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then cornflake crumbs.<BR/><BR/>Place coated chicken breasts in prepared baking dish. Everyone said the same thing that you said about it being so much trouble and all. <BR/><BR/>Ok, as far as an easy recipe...I've got a couple (not really recipes, seeing as how I don't really cook) <BR/><BR/>1.) Breakfast (from Lynn who's lost over 17 pounds btw) Two strips of center cut Oscar Mayer bacon (yum!) and a Thomas's Multigrain light english muffin...two points and it keeps me full from 9am until after 1pm. <BR/><BR/>2.) Lunch - Campbells soup at hand chicken with mini noodles...1 point...and a salad with red wine vinegar ZERO points!!<BR/><BR/>3.)Dinner - (So far my fave) Tuna patties - One pack Light chunk tuna in water, one egg white, 1/4 cup flour, chopped up onion. Mix, press into patty and fry without grease. YUM!<BR/><BR/>Squash casserol (slurp!) One can fat free cream of mushroom soup (I honestly can't tell it from regular) 4 cups of squash, one onion, some salt to taste and top it with 2 tbsp of shredded chedder. 2 points per serving. She froze it and was able to take hers out.
